Neapolitan Eggs

Ingredients:Neapolitan Eggs
• 2 eggs
• 1 tomato, chopped
4 oz mozzarella cheese, grated
1 oz Parmesan cheese, grated
• 1/4 teaspoon thyme
• 1/4 teaspoon rosemary
• salt, pepper

Directions:
• Preheat oven to 400 degrees F.
• Divide chopped tomato between two ramekins.
• Salt, pepper.
• Add mozzarella cheese.
• Add eggs.
• Add rosemary and thyme.
• Sprinkle with Parmesan cheese.
• Put in the preheated oven for 12 minutes.
• Serve with toast.
