Candied Walnuts

Ingredients:candied walnuts
4 oz walnuts
• 1/4 cup powdered sugar
• 1/8 teaspoon salt

• Preheat the oven to 350 degrees F.
• In a medium sized bowl, mix together the sugar, cayenne and salt.
• Bring a small saucepan of water to boil.
• Add the walnuts and blanch them for 3 minutes.
• Drain well and then immediately roll the walnuts in the sugar mixture until thoroughly coated. The sugar will melt slightly.
• Transfer the walnuts to a baking sheet or pan and bake, stirring occasionally, until they are a deep golden brown, about 20 minutes. Watch carefully because the sugar can burn easily.
• Let cool completely before serving.

Apple Chips

Ingredients:apple chips12
• 2 Golden Delicious apples, cored and thinly sliced
• 1 1/2 teaspoons white sugar (optional)
• 1/2 teaspoon ground cinnamon (optional)

• Preheat oven to 225 degrees F (110 degrees C).
• Arrange apples slices on a metal baking sheet in a single layer.
• Mix sugar and cinnamon together in a bowl; sprinkle over apple slices. (Optional).
• Bake in the preheated oven until apples are dried and edges curl up, 45 minutes to 1 hour.
• Transfer apple chips, using a metal spatula, to a wire rack until cooled and crispy.

Note: Keep the oven slightly open while making apple chips.

Crispy Green Bean Fries

Ingredients:Crispy Green Bean Fries
1 lb green beans
• 2 cups chicken broth
• 1 egg
• 1/2 cup milk
• 1 cup instant flour
• 1 cup breadcrumbs
• 1/4 teaspoon onion powder
• 1/4 teaspoon garlic powder
• 1 pinch cayenne pepper
• Kosher salt and black pepper
• peanut or vegetable oil, for frying
• 1/2 cup ranch dressing
• 1/2 cucumber, peeled, chopped & seeded
• 1 TB spoon horseradish, drained
• 1 TB spoon milk
• 1 TB spoon distilled white vinegar
• 3 teaspoons wasabi powder
• 1 pinch cayenne pepper
• Kosher salt

• Puree the dressing, cucumber, horseradish, milk, vinegar, wasabi powder, cayenne pepper, and salt to taste in blender until smooth.
• Cover and refrigerate until ready to serve.
• Bring the broth to a boiling a saucepan over high heat.
• Add the green beans and cook until tender, about 5 minutes.
• Remove the beans and rinse with cold water.
• Whisk the egg and milk in a shallow bowl.
• Put 1/2 cup instant flour in a second shallow bowl.
• Combine breadcrumbs, the remaining 1/2 cup flour, the onion powder, garlic powder, cayenne and salt and pepper in the third shallow bowl.
• Line a baking sheet with parchment paper.
• Toss the green beans in the flour and shake of excess.
• One at a time, dip the beans in the egg mixture, dredge in the breadcrumb mixture and lay on the prepared baking sheet.
• Freeze until the coating is set, about 30 minutes.
•  Heat 1 inch oil in a deep pot over medium heat until a deep-fry thermometer registers 350 degrees F.
• Fry green beans in batches  for 2 minutes until golden brown.
• Transfer the beans with tongs or a skimmer to a rack or paper towels to drain.
• Serve with dip.

Cheese Quesadillas

Ingredients:Cheese Quesadillas
• 4 (10-inch) flour tortillas
• 1 cup grated Queso Fresco
• 4 tablespoons butter

• Lay the tortillas flat on a cookie sheet.
• Sprinkle some of the cheese on 1 half of each tortilla. Try not to get it too close to the edge.
• Fold the tortillas in half over the cheese to make a half-moon.
• Warm a skillet over low heat and add 1 tablespoon of the butter.
• Add the tortilla to the skillet and cook until it is lightly brown, about 1 minutes.
• Turn the tortilla over and cook the other side until brown and the cheese is all gooey.
• Use a spatula to transfer to individual plates or a large platter.
• Repeat with remaining butter and tortillas.

Hot Apple Cider

Ingredients:apple cider
• 6 cups apple cider or freshly squeezed apple juice
• 1/4 cup maple syrup
• 2 cinnamon sticks
• 6 whole cloves
• 3 star anise
• 1 orange, peels and juice
• 1 lemon, peels cut into strips

• Combine all the ingredients in a saucepan and simmer over low heat for 5 to 10 minutes.
•  Turn the heat off put.
• Cover and let stand for an hour.
• Reheat the cider to the desired temperature.
• Pour into mugs and serve.

Baked Tortilla Chips

Ingredients:Tortilla Chips
• Twelve 6-inch corn tortillas (preferably white)
• 2 tablespoons olive oil
• 1 garlic clove, minced
• 1 teaspoon fine salt

• Preheat the oven to 350 degrees F.
• Mix olive oil with garlic.
• Brush both sides of the tortillas with the oil mixture.
• Stack the tortillas and cut the pile into sixths to make chips.
• Spread the chips out in a single layer on three large baking sheets and season with salt.
• Bake until golden brown and crisp, rotating the baking sheets once, about 12 to 15 minutes.
• Serve.


• 2 (15 oz) cans of Garbanzo Beans
• 2 TB spoons Lemon Juice
• 1 Tea spoon Salt
• 2 Tea spoon Minced Garlic
• 3 TB spoons Tahini (Sesame Paste)
• Extra Virgin Olive Oil
• Paprika

• Drain 1 of the cans into a separate bowl to use if needed in the process.
• Place all the ingredients in the food processor and blend for 2 -3 minutes or until smooth.
• Cool in the fridge for a few hours until thick.
• Spread on a plate and garnish with extra virgin oil and paprika.
• Serve with toasted pita bread, fresh vegetables or chips.

Hot Mulled Cider

What you need:
• 16 cups fresh apple cider
• 4 (2-inch) cinnamon sticks
• 2 oranges, peels and juice
• 8 whole cloves
• 6 star anise

What you do:
• Combine all the ingredients in a saucepan and simmer over low heat for 5 to 10 minutes.
• Turn the heat off put.
• Cover and let stand for an hour.
• Reheat the cider to the desired temperature.
• Pour into mugs and serve.


What you need:
• 3 cups apple cherry juice
• ½ cup water
• ½ apple chopped
• zest of 1 orange
• zest of 1 lemon
• 2 table spoons raisins
• 1 stick of cinnamon
• ½ teaspoon ground  cloves
• 4 black peppers
• ¼ teaspoon ground ginger
• ¼ teaspoon cardamom
• 1 tablespoon sugar

What you do:
• Combine all the ingredients in a saucepan and simmer over low heat for 5  minutes.
• Turn the heat off.
• Put the lid on and let it rest for 5 minutes
• Pour into mugs and serve.

Best Hot Chocolate

What you need:
• 3 teaspoons unsweetened cocoa powder
• 5 teaspoons white sugar
• 2 cups milk
• ½  teaspoon vanilla extract
• pinch of cayenne pepper

What you do:
• Combine the cocoa and sugar in a bowl.
Heat the milk but do not boil.
• Stir in cocoa mixture.
• Simmer and stir for about 2 minutes.
• Remove from heat and add vanilla and cayenne pepper.
• Divide between 4 mugs.
