Ingredients:
• 2 TB spoons olive oil
• 1 medium onion, chopped
• 4 garlic cloves, minced
• 4 tomatoes, chopped
• 2 TB spoon lemon juice
• 1 TB sugar
• ¼ teaspoon red pepper flakes
• ½ teaspoon ground pepper
• salt
• 1 lb uncooked salmon, cut in 1 inch pieces
• 1/4 cup white wine
• ¼ cup chopped fresh parsley
• pasta
Directions:
• Heat oil in large pan over medium heat.
• Add onion; cook 3 minutes.
• Add garlic; cook an additional 2 minutes.
• Add tomatoes, lemon juice, sugar, red pepper flakes, ground pepper and salt; simmer 10 minutes.
• Add salmon and wine; simmer 10 more minutes stirring occasionally (gently to avoid breaking apart salmon).
• Cook pasta while sauce is simmering.
• Add parsley to the sauce a couple of minutes before serving.
• Serve
