What you need:
• 2 medium onions, peeled and chopped
• 2 cups lentils, sorted and rinsed
• 2 garlic cloves, minced
• 1 bay leave
• 2 medium carrots, scraped and diced
• ½ teaspoon salt
• 2 stalks celery, diced
• ¼ teaspoon fresh ground black pepper
• 2 teaspoons olive oil
• 1 lb hot dogs, sliced in half inch rounds
• 9 cups water
• 2 tablespoons cider vinegar
What you do:
•Sauté onions, garlic, carrots, and celery in heated oil in a large skillet for 5 minutes.
• Add water, lentils, bay leaf, salt, and pepper.
• Bring to a boil.
• Lower heat and cook slowly, covered about 30 minutes, until lentils are just tender.
• Add hot dogs and cook another 1 minutes.
• Remove from heat and stir in vinegar.
• Remove and discard bay leaf.
• Serve

October 26, 2020 at 11:04 amI think the time for cooking the lentils should be 30 minutes, not 3. Undercooked legumes can upset the stomach. With this change, this is a nice hearty soup. I left out the carrot because I didn’t have any on hand. I added a shredded collard leaf. I had cheesy hot dogs, so I used those. yum! I’ll be making this again.
