Ingredients:
• 2 pounds salmon
• 500 gram coarse salt
• 250 gram sugar
• 3 TB spoons black pepper

Directions:
• Mix salt, pepper and sugar.
• Cover salmon with salt and sugar mixture on both sides.
• Cover with plastic and put in a fridge for 12 hours.
• Take out of the fridge.
• Dry salmon with paper towels.
• Cover with plastic.
• Put in the fridge for 12 more hours.
• Serve.
