Ingredients:
• 4 eggs, separated
• 1 1/2 cups sugar
• 1 teaspoon vanilla
• 1/2 cup oil
• zest of 1 orange
• 1 cup orange juice, plus 1TB spoon for glaze
• 1 tablespoon baking powder
• 2 cups flour
• 1/4 teaspoon salt
• 1/2 cup confectioners’ sugar for glaze
• pistachio, crushed and shredded coconut (optional)
Directions:
• Grease a 9 inch pan.
• Preheat oven to 350 degrees F.
• Mix egg yolks, sugar, vanilla, oil, orange zest, 1 cup of orange juice, baking powder, salt and flour.
• Beat whites with sugar, until moderately stiff.
• Fold stiff egg whites into mixture.
• Pour batter into prepared pan.
• Bake in preheated oven for 40 minutes.
• Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
For glaze:
• In a small bowl, stir together confectioners’ sugar and 1 TB spoon orange juice until smooth.
• Pour the glaze over the cake and decorate with crushed pistachio and shredded coconut if desired.
• Enjoy.
