Ingredients:
•2 lb pork, cut into 1 inch cubes
• 1(15.5oz) can of kidney beans, drained and rinsed
• 2 carrots, cut
• 2 onions, chopped
• 6 cloves garlic, crashed
• 1 1/2 lb potatoes, cut into cubes
• 4 bay leaves
• 3/4 cup white wine
• 3 tablespoons tomato paste
• salt and pepper
• Parsley, optional
Directions:
• Preheat the oven to 500 degrees F.
• At the bottom of the baking pot, place the pork.
• Season with salt and pepper.
• Put the onions.
• Add the beans.
• Add the carrots andthe bay leaves (1 per pot).
• Add the potatoes.
• Season with salt and pepper.
• Mix wine with tomato paste.
•Pour the wine mixture into the pots ( about 4 tablespoons per pot).
• Add water.
• Put in the oven for 20 minutes.
• Lower the temperature to 350 degrees F.
• After 1 hour, add the garlic and parsley (if using).
• Cook for additional 30 minutes.
• Serve.
