Ingredients:
• 2 lb Italian Sausage
• 2 tablespoons dried parsley
• 2 tablespoons mozzarella cheese
• 1 egg
• 2 tablespoons olive oil
• 1/4 cup chopped onion
• 1/4 cup celery, diced
• 1 teaspoon salt
• 1 (6 oz) can tomato paste
• 1 can (28 oz) diced tomatoes
• 1 teaspoon garlic, chopped
• 1/2 teaspoon baking soda
• 1 teaspoon sugar
• 1/4 teaspoon nutmeg
• 1/2 teaspoon oregano
• 1/8 teaspoon pepper
• 1/4 cup mozzarella cheese
• 8 oz mushrooms, diced

Directions:
• Remove sausage from casing and brown in dutch oven.
• Remove sausage and mix it with parsley, mozzarella cheese and egg.
• For the sauce, saute the celery and onion in the olive oil until tender, about 5 minutes.
• Add the tomato paste and stir well.
• Fill the tomato paste can with water and add to the sauce.
• Add remaining ingredients, including meat and simmer for 1 hour.
• Serve over spaghetti.
