Ingredients:
• zest and juice of one lemon
• 1 1/2 cup sugar
• 2 1/2 cup flour
• 3 eggs
• 100 ml olive oil
• 1 teaspoon vanilla
• 1 1/2 teaspoon baking powder
• 8 oz sour cream

Directions:
• Preheat oven to 390 degrees F.
• In a large bow mix sugar with eggs.
• Add oil, lemon zest and lemon juice. Mix well.
• Add flour, baking powder and vanilla. Mix well.
• Add sour cream and mix well.
• Fill greased or paper-lined muffin cups three-fourths full.
• Bake  for 20-25 minutes or until a toothpick inserted near the center comes out clean.
• Cool for 5 minutes before removing from pans to wire racks.

Makes 12 muffins.

Spread some  Lemon Cream Cheese Frosting on top  to make delicious Lemon Cupcakes.
