Ingredients:
• 1 pear, finely shredded
• 1 egg
• 1/2 cup milk
• 1/2 cup Greek yogurt
• 1/4 teaspoon vanilla
• 2 TB spoons sugar
• 1/4 teaspoon salt
• 1 cup self-rising flour
Directions:
• Preheat griddle to 425- 450°F.
• Mix together egg, Greek yogurt, milk, vanilla, sugar, salt and self-rising flour.
• Add pear.
• Let it stand for 5 minutes.
• Spoon batter onto hot griddle (1/4 cup for each pancake).
• Cook for 1 1/2 minutes; turn pancake over and continue to cook for another 1 to 1 1/2 minutes.
• Serve with your choice of jams or syrups.
