Ingredients:
• 2 cups kefir
• 2 TB spoons sugar
• 1 teaspoon salt
• 2 eggs
• 2 cups flour
• 1/2 teaspoon baking soda
• 1 cup hot water
• 2 TB spoons butter, melted

Directions:
• In a big bowl combine together sugar, salt and eggs.
• Add kefir, mix well.
• Add flour, one cup at a time.
• Dissolve baking soda in the cup of hot water.
• Add water and melted butter to the crepes mixture, mix well.
• Let the batter sit for 5 minutes.
• Heat a lightly oiled griddle or frying pan over medium high heat.
• Pour or scoop the batter onto the griddle, using approximately 2 tablespoons for each blin.
• Tip and rotate pan to spread batter as thinly as possible.
• Brown on both sides (30 seconds per side).
• Brush melted butter over each blin.
• Serve hot.
