Ingredients:
• 1 cup flour
• 3 cups milk
• 2 eggs
• 1 teaspoon sugar
• pinch of salt
• zest of 1/2 orange
• 1 TB spoon butter, melted
• topping (recipe follows)
• syrup (recipe follows)

Directions:
• In a big bowl combine flour, orange zest, sugar and salt.
• Add milk and eggs.
• Mix well.
• Add melted butter.
• Heat a lightly oiled griddle or frying pan over medium high heat.
• Pour or scoop the batter onto the griddle, using approximately 2 tablespoons for each blin.
• Tip and rotate pan to spread batter as thinly as possible.
• Brown on both sides (1 minute per side).
• Serve with bananas and  syrup on top.

Topping:
2 bananas saute in 3 TB spoons of butter.

Syrup:
Ingredients:
• 4 TB spoons brown sugar
• zest of 1 orange
• Juice of 1 orange (200 ml)
• 2 TB spoon rum

Directions:
• In a pan mix together brown sugar, orange zest and orange juice.
• Heat for sugar to dissolve.
• Add rum and simmer for 1 more minute.
