Ingredients:
• 2 TB spoons oil
• 1.5 lb pounds boneless pork loin, cut into 2-inch pieces
• 1 teaspoon Kosher salt
• 1/2 teaspoon black pepper
• 1 onion, chopped
• 1 medium carrot, peeled, chopped
• 3 large garlic cloves, chopped
• 6 medium potatoes, chopped
• 1 cup canned diced tomatoes in juice
• 1 cup beer
• 1 cup chicken broth
• 1/2 teaspoon dried marjoram
Directions:
• In a dutch oven or tagine add olive oil and heat on medium.
• Salt and pepper pork.
• Add pork to the pot and cook on medium-high for 5 minutes.
• Add onions and allow to sweat for 3-4 minutes.
• Add garlic and carrots and saute for 5 more minutes.
• Stir in potatoes, tomatoes with juices, beer, broth and marjoram.
•Return to a boil.
• Put the lid on the pot and put in the oven.
• Allow to cook for 1 1/2 hours.
