Ingredients:
• 1 cup chicken broth
• 2 tomatoes, chopped
• 1 TB spoon butter
• 2 cloves garlic, minced
• 1 cup couscous
• 1/4 teaspoon salt
• 1/8 teaspoon pepper
• 2 TB spoons fresh basil, chopped
• 1/4 cup queso fresco, crumbled

Directions:
• In a medium saucepan bring chicken broth, tomatoes, garlic, butter, salt and pepper to a boil.
• Add couscous, stir quickly.
• Remove from heat and cover.
• Let stand for 4-5 minutes.
• Fluff with a fork.
• Stir basil and queso fresco into couscous.
• Fluff with a fork before serving.
