Ingredients:
• 2 – 2.5 lb skinless, boneless turkey breast
• 2 TB spoons Kosher salt
• 1 gallon water
• 1 teaspoon minced garlic
• 1 teaspoon chopped fresh rosemary leaves
• 1 teaspoon chopped fresh sage leaves
• 1/4 teaspoon chopped fresh thyme leaves
• 1/8 teaspoon freshly ground black pepper
Directions:
• Mix salt and water in a large pot.
• Submerge turkey breast in the water.
• Leave turkey breast in the brine for 4 hours.
• Preheat oven to 500 degrees F.
• Discard the brine.
• Pat the turkey breast dry.
• Mix garlic, rosemary, sage, thyme, and black pepper together.
• Rub the turkey breast with the herb mixture.
• Wrap the turkey breast in foil.
• Roast turkey breast in the preheated oven for 15 minutes.
• Turn the oven heat off.
• Leave the turkey breast in the oven for 2 hours. Do not open the door.
• Serve.
