Ingredients:
• 4 cups fresh or frozen blueberries, thawed
• 1/2 cup sugar
• 1/2 cup water
• 1 teaspoon grated lemon peel
• 1 TB spoon lemon juice
• 1/2 cup unsalted butter, melted
• 1 cup all-purpose flour
• 1 cup sugar
• 1 tablespoon baking powder
• Pinch of salt
• 1 cup milk

Directions:
• Preheat oven to 375 degrees F.
• In a 10-in. ovenproof skillet, combine blueberries, sugar, water, lemon peel, and lemon juice.
• Bring to a boil.
• Reduce heat; simmer, uncovered, 9-11 minutes or until slightly thickened, stirring occasionally.
• Meanwhile, combine flour, 1 cup sugar, baking powder, and salt; add milk and melted butter, stirring just until dry ingredients are moistened.
• Pour batter over blueberries.
• Transfer to oven.
• Bake, uncovered for 20-30 minutes or until golden brown.
• Serve warm with ice cream.
