Ingredients:
• 5 ripe peaches, peeled, pitted, and chopped
• 3-4 thyme springs
• 70 grams powdered sugar
• 80 grams flour
• 2 eggs, room temperature
• 60 grams butter, melted, room temperature
• 350 mL milk

Directions:
• Preheat oven to 390 degrees F.
• In a pot bring milk and thyme to boil.
• Turn the heat off, discard the thyme springs.
• Cool  milk to room temperature.
• Thoroughly butter 5 (8-ounce) ramekins.
• Spread the peaches evenly on the bottom of the ramekins.
• Mix together eggs and powdered sugar.
• Add the flour, gradually add milk and butter.
• Pour the mixture over the peaches.
• Bake in the preheated oven for 25-30 minutes.
•  Sprinkle with powdered sugar, serve warm.
