• 3 cups nonfat dry milk powder
• 3/4 cup  powdered sugar
• 1/2 cup unsweetened cocoa powder (Dutch-process preferred)
• 1 pinch cayenne pepper
• 1/8 teaspoon salt

• Combine all ingredients in a mixing bowl and incorporate evenly.
• Transfer mix to an airtight container.

N.B.: Seal the rest in an airtight container, keeps indefinitely in the pantry. Works great with hot water or warm milk.
