Ingredients:
• 1 lb salmon fillet, skin on
• 1 onion, peeled
• 1 carrot, peeled
• 8 cups water
• 2 potatoes, peeled and sliced
• 8 oz chanterelle mushrooms, chopped
• 2 cups cream
• salt, white pepper
• 4 TB spoons fresh dill, chopped.
Directions:
• Bring to boil water, onion, carrot, and salmon skin.
• Reduce heat and simmer for 20 minutes.
• Discard onion, carrot and salmon skin.
•
• Return back to boil and add potatoes, simmer for 10 minutes.
• Add cream, salmon and mushrooms and simmer for 10 more minutes.
• Add salt, pepper and dill. Let it stand for 5 minutes.
• Serve.
