Ingredients:
• 1/2 liter water
• 3 oz salt
• couple of spring of fresh herbs like rosemary, thyme, and parsley
• 4 garlic cloves
• 15 oz of ice water
• 1 (3-4 lb) chicken or chicken pieces

Directions:
• Combine water, salt, garlic, and herbs  in a medium saucepan over high heat.
• Bring to a boil.
• Cover and remove from heat.
• Let stand for 10 minutes.
• Place ice water in a large bowl and add brine to it.
• Place chicken in the brine.
• Let sit at room temperature for 2 to 3 hours, or refrigerate for 4 to 6 hours.
• Drain chicken and pat dry.
• Use in any recipe.
