Ingredients:
• 3 chicken breasts
• 1 teaspoon garlic powder
• 1/4 teaspoon pepper
• 1 cup Pesto sauce


• 8 oz Mozzarella cheese, shredded
• 2 tomatoes, thinly sliced


• 1 tomato, chopped


• 1 Tbsp fresh basil leaves, shredded


• 1 Tbsp olive oil
• 1 Tbsp butter

Directions:
• Preheat oven to 425˚F.
• Cut chicken breast in half lengthwise.
• Pound each cutlet into 1/8″ thick cutlets.
• Season both sides of chicken with garlic powder and black pepper.
• Spoon and spread 1 Tbsp pesto in the center of each cutlet
• Top with tomato slices and sprinkle with mozzarella cheese.
• Roll the chicken up tightly and seal ends with a toothpick.
• Preheat large oven-safe skillet over medium heat with oil and butter.
• Add chicken roll-ups and sear on both sides until golden (4 min per side).


• Sprinkle tops with  cheese,chopped tomatoes, and the rest of the pesto sauce.
• Place the skillet on the center rack of oven and bake 425˚F for 13-15 minutes  until internal temp  reaches 160˚F.
