Mexican Chorizo and Eggs is the best comfort food for breakfast.
What you need to make the most amazing Chorizo and Eggs: • 1 TB spoon olive oil • 1/2 onion, chopped • 1/2 pound of Mexican chorizo sausage, removed from sausage casing • 5 eggs • 1/4 cup Cheddar cheese, shredded
Directions: • In a large skillet heat olive oil. • Add the chopped onions and cook until softened, for about 5 minutes.
• Add chorizo.
• Use spatula to break up the pieces of sausage. • Stir until the sausage is cooked through, for about 5 minutes. • Drain the excess fat from the pan. • Crack the eggs into the pan.
• Break the yolks and stir the eggs into the sausage. • Sprinkle cheese over the eggs.
• Stir constantly until the eggs begin to set. • Remove from heat. • Serve immediately.
