Ingredients:
• 1 1/2 cups flour, sifted
• 1/2 teaspoon baking powder
• 1 cup butter, softened
• 1 tablespoon milk
• 1 egg yolk, beaten
• 8 ounces cream cheese, softened
• 1 tablespoon sugar
• 12 ounces Solo apricot filling
Directions:
• Sift flour and baking powder.
• Cream butter, cream cheese, milk and sugar.
• Add beaten egg yolk and flour mixture.
• Chill for several hours.
• Preheat oven to 400 degrees F.
• Roll 1/8 to 1/4 “thick.
• Cut into 2” rounds with a cookie cutter and place on cookie sheet.
• Make a depression in center of each cookie and fill with apricot filling.
• Bake at 400 degrees for 10-12 minutes until lightly browned.
• Sprinkle with powdered sugar before serving.
