Ingredients:
• 1/2 cup all-purpose flour
• 3/4 teaspoon baking powder
• 1/2 cup chopped pecans
• 1/2 cup chopped dried cherries
• 1 egg
• 1/4 cup sugar
Directions:
• Preheat oven to 350 degrees F.
• Coat a 8 by 8-inch baking pan with butter or nonstick spray.
• Soak dried cherries in hot water for 30 second. Dry.
• Beat egg and sugar until pale.
• Add the flour and baking powder. Mix with a mixing spoon.
• Add the chopped nuts and the dried fruit and stir.
• Transfer the dough to the prepared pan and spread evenly with a spatula.
• Bake for 20 minutes.
• Cut immediately. Cool.
