2.5 lb pork butt,cubed
1/2 tsp Curing salt or Prague powder #1
1 tsp Kosher salt
1 tsp black pepper
1/8 teaspoon ground marjoram
1/8 teaspoon ground thyme
1/8 teaspoon nutmeg
1/8 teaspoon ground ginger
1 onion, diced
300 grams crushed ice

Freeze cubed meat in the freezer for about about 30 minutes.
Mix the spices and onion with the meat.
Refrigerate the meat for about 30 minutes.
Mince the meat in the mixer, in 2 portion, at highest speed. For about 2 minutes.
Add the crushed ice to the mixture, and mix again at the highest speed.
Preheat oven to 350 F.
Pour mixture in cool, greased bread pan.
Fill the form with the mixture, press down so the air bubbles can escape, make a diamond shape pattern in the dough with a wet spatula.
Bake for 60-75 minutes.
Internal temperature needs to reach 170 F.
