Ingredients:
• 1 carrot, chopped
• 1 onion, sliced
• 1 garlic clove, thinly sliced
• 8 oz. mushrooms, chopped
• 2 chicken thighs, chopped ( it is better to use bone-in chicken thighs for flavor)
• 2 TB spoons butter
• 1 teaspoon of salt
• 1 teaspoon of pepper
• 1 cup barley
• 3 cups chicken broth
• fresh parsley, to taste

Directions:
• Sauté chicken in butter for about 4 minutes.
• Add onion, carrots, mushrooms, and garlic and continue sautéing for another 10 minutes.
• Add salt and pepper. Mix well.
• Add barley. Mix well.
• Add chicken broth.
• Mix, cover with lid and cook on low heat for 40-50 minutes.
• Meanwhile chop parsley.
• When barley is done, add parsley, mix well.
• Serve.
