• 1 cup farro
• 8 oz mushrooms, sliced
• 2 onions, thinly sliced
• 2.5 cups boiling water
• 4 TB spoons butter
• salt, pepper

• Thoroughly rinse the farro, until water runs clear.
• Sauté 1 onion in 2 TB spoons of butter for 3-5 minutes.
• Add farro, mix, cover with boiling water, cover, and cook on low heat for 30-40 minutes, till farro is soft. (You can also cook farro in a rice cooker on “Brown Rice” setting.)
• Meanwhile, sauté the other onion in 2 TB spoons butter for 3 minutes. Add mushrooms, salt, pepper, and continue cooking for 10 more minutes.
• When farro is cooked, add the mushroom onion mix to it. Mix well.
• Serve.
