Ingredients:
• 1 cup millet ( rinsed in boiling water)
• 4 chicken boneless, skinless chicken thighs, cut into 1 inch cubes
• 2 carrots, chopped
• 1 onion, chopped
• 1 TB spoon oil
• 1 cup white wine
• 2 teaspoons Chicken Rub
• 3 garlic cloves, chopped
• salt, pepper
• 2 table spoons oil
• 1.5 cups chicken broth
• 3 table spoons butter

Directions:
• Sprinkle chicken with chicken rub and salt.
• Sauté chicken in oil over medium high heat for 5 minutes.
• Add onion and carrots, and the rest of the chicken rub. Continue sautéing for additional 7 minutes.
•Add garlic and continue cooking for 1 minute.
• Pour wine over chicken and vegetables and cook for 1-2 minutes on high heat.
• Add millet and chicken broth. Mix well.
• Reduce heat to low, cover with lid, and continue cooking for 20 minutes.
• Add butter, mix well.
• Serve.
