Ingredients:
For Meat:
• 2 pounds lamb, cut in chunks
• 2 onions, thinly sliced
• 3 carrots, cut into matchsticks
• 1 bell pepper, thinly sliced
• 1/2 small head of green cabbage, thinly sliced
• 5 garlic cloves, minced
• 1 ½ tablespoons tsuivan seasoning
• 1/2 teaspoon salt
• 2 tablespoons soy sauce
• 3 tablespoons oil
• 2 cups water
• 2 green onions thinly sliced, for garnish
For Noodles:
• 1 large egg
• 100 ml water
• 220 grams flour
• 1/4 teaspoon turmeric
• pinch of salt
• oil for brushing
Directions:
Noodles:
• Place the flour, salt, and turmeric in a bowl and make a well in the center.
• Add the water and egg and mix to combine and form a dough.
• Knead the dough well until smooth and elastic.
• Cover with a kitchen towel and allow to rest for 20 minutes.
• Divide the rested dough into 3 equal pieces.
• Roll the piece of dough into a thin sheet, making sure the bottom does not stick to the surface.
• Grease the top of the sheet with about 1 tablespoon of oil- making sure all parts are covered. Loosely roll the sheet up, long side to long side.
• Steam the rolls for 20 minutes.
• Let them cool down a little and then using a sharp knife, cut the rolls into strips about 1/4 inch (5 millimeters) wide.
• Gently shake the strips loose with your fingers to separate.
• Set aside.
Meat:
• Place a large pan over medium heat and drizzle with oil.
• Once heated, add meat, season with salt and cook for 10 minutes.
• Add the sliced onions and cook, stirring often, until softened, for 5 minutes.
• Add the carrots, pepper, cabbage, and garlic. Cook covered for 10 minutes.
• Season with tsuivan seasoning and soy sauce.
• Add water, bring to boil, cover, reduce to a simmer, and cook for 30-40 minutes.
• Add the cooked noodles and continue cooking for 3-5 minutes.
• Serve topped with the green onions.
