Ingredients:
Awaze Sauce:
• 3 Tbsp water
• 3 Tbsp berbere spice blend
• 1 tsp salt
• ½ tsp black pepper
• 1 Tbsp oil
Awaze Tibs:
• 2 Tbsp olive oil
• 1-1 1/2 pounds chuck roast, cut into thinly sliced bites
• 1 onion, sliced
• 4 large garlic cloves, chopped
• 1 (14.5 oz.) can diced tomatoes
• 1 cup beef broth
• 1 sprig rosemary
• salt, to taste
• 2 Tbsp niter kebbeh, ghee or clarified butter
Directions:
• In a small bowl, mix together all the ingredients for Awaze sauce and set it aside.
• Season beef slices with salt.
• Heat olive oil in a cast iron skillet over high heat and sauté beef for 5-6 minutes, stirring occasionally.
•Add in sliced onion and sauté for 8-10 minutes, or until onion starts to soften.
• Add garlic and sauté for 1-2 minutes.
• Add tomatoes and Awaze sauce. Mix well with the beef.
• Add beef broth, cover the pan, and cook for 20-30 minutes.
• Stir in niter kebbeh or ghee.
• Serve immediately with injera, rice, or your favorite whole grain bread.
