Ingredients:
• 1/4 cup parmesan cheese, grated
• 1/2 cup bread crumbs (Panko works great for extra crunch!)
• 1 lemon zest
• 2 tablespoons parsley, chopped
• 1 pound cod fillet
• 2 tablespoons oil
• 1/2 stick butter
• juice of 1 lemon (2 tablespoons)
• salt and freshly ground black pepper, to taste
Directions:
• In a small bowl, combine the breadcrumbs, grated Parmesan, lemon zest, chopped parsley, salt, and pepper. Mix well and set aside.
• Season both sides of the cod fillets with a pinch of salt and pepper.
• Heat 2 tbsp of oil in a large, oven-safe skillet over medium-high heat.
• Pan-fry the cod for 2 to 3 minutes until the bottom is lightly golden and the fish starts to become tender.
• Preheat your oven’s broiler (grill) to high.
• Carefully flip the cod fillets over in the skillet.
• Generously sprinkle the top of each fillet with your prepared Parmesan-crumb mixture.
• Place the skillet under the hot broiler for 2 to 3 minutes until the crust is beautifully browned and crispy.
• Carefully remove the hot skillet from the oven and place it back on the stovetop over low heat.
• Add the 1/2 stick of butter and 2 tbsp of lemon juice to the pan.
• Let the butter melt, swirling it around the fish to create a rich, citrusy sauce.
• Spoon the warm lemon butter sauce over the fish and serve.
